I just did one of my other favorite things to do in the mornings. I packed a lunch for my husband. I love doing this every morning during the week and I strive to pack good lunches that are healthy, but won’t bog him down. You want to make it something to look forward to, rather than something he will want to trade for a pop tart. It’s not an easy task because you never know what someone will want to eat in the middle of the day. I rarely pack a sandwich. A sandwich is a last resort.
I have been packing a lunch for him to take to work for the last 20 years. That’s a lot of lunches.
One of my favorite cooking shows on television is Rachel Khoo. (just click her name here to go right to her website…she’s awesome!) She is always cooking up something fun, adventurous and inexpensive. That’s where I got the idea for my latest lunchtime possibilities! I call them Lunch Jars.
Lunch jars are simply quart sized Mason jars you use for canning and pickling. I tuck fabulous food inside each one and send them off in my husband’s lunch bag every day. They are so easy to make too.
Rachel suggests putting your flavoring like soy sauce or bouillon in the bottom of the jar. Then you can add vegetables like zucchini, mushrooms, bean sprouts, fresh basil, sesame oil, etc. along with dried vermicelli noodles. Close the top and store in the refrigerator for up to five days, if you want, or add boiling water to the rim and eat later that day. I make several at the beginning of the week and dole them out as the mood strikes me.
You can do all soup jars if you want to, or you can do some salad jars too. I’m sure you’ve seen those all over the Internet and they are just as easy to assemble and enjoy. Add your salad dressing to the bottom along with onions, radishes or tomatoes. That way the dressing won’t wilt the lettuce before you get a chance to eat it.
This way you can have a soup and salad, or a soup and sandwich, or a salad and a piece of fresh fruit. The combinations are endless and the health benefits are stupendous! The best part is that my husband enjoys a good lunch and I enjoy making something beautiful to tuck in his lunch bag.
