Lemon blueberry cream cheese cake

Today is the annual Baking Treats With Our Girlfriends Day, so I thought it would put everyone in the holiday mood to see some of the treats we will be making today.  If you are out and about, stop by for a slice!

This is a lemon cream cheese blueberry layer cake. Yummy!  

I watched Sandra Dee make something similar to this cake a long time ago, The flavor combinations seemed off the charts, so I set out to duplicate this in my own semi-homemade way too. Here’s what I bought to make this cake:

One lemon cake mix

One can of cream cheese icing

1 pint of blueberries

1 lemon

Follow the directions for assembling the cake mix and pour into two layer cake pans.

Bake.

Zest one half of the lemon and squeeze for about 2 tablespoons of juice.

Mix lemon zest and lemon juice into canned icing.

Allow cake to cool completely.

Place one layer on cake stand and apply icing. You can ice the sides too, but I never do. I think it just looks prettier bare.

Sprinkle iced top liberally with blueberries.

Place other cake layer on top of iced layer and repeat icing and sprinkling liberally with blueberries.

Ta-dah!
